The Black Velvet: half stout and half champagne, served cold or quite cool. If stout counts as beer. It’s an acquired taste but even if you’re new to it it’s better than you’d think. I like it with anything from Guinness to a very strong and rich Imperial stout, or even some porters. I doubt it would be bearable with a lager, though, and most American beers are lagers.

Tiger nuts are tubers of a relative of the weed nutsedge, Cyperus esculentus, also known as chufa. They are among the longest-cultivated crops (ancient Egypt, definitely), and will thrive in most subtropical and some tropical places: northern Florida, certainly, where they used be be grown as hog feed and are nowadays grown mostly to attract and feed wild turkey (plant, let mature, plow up to bring tubers to the surface for the birds). Why nobody grows and uses them for horchata in the Americas I cannot explain: in north Florida their wild relatives are almost unkillable, and the Spanish were here in the 16th century (maybe no Valencians?).

“Spirits” referring to distilled alcohol is a usage that dates back to the time when people believed that there was a spirit of some kind in the alcohol that caused the effects. For someone like myself, a recovering alcoholic, there is indeed a spirit in the bottle. In fact it’s the king of evil spirits, Satan.

1. Hit tiger on head with anvil.
2. Remove tiger’s head and set aside for later.
3. Skin tiger. Furry drinks are not good sellers.
4. Remove paws, tail and guts and place near head.
5. Cut now unrecognizable tiger into 10 medium chunks.
6. Place 4 ounces of rum in blender.
7. Place 12 ice cube in blender.
8. Bring 10 tiger chunks to blender and stare at the blender thoughtfully for 5 minutes.
9. Throw tiger chucks in the freezer for use in Tiger and Vegetable Stew (see page 35).
10. Add 2 oz. of chopped strawberries and 2 more oz. of rum.
11. Blend thoroughly
12. Voila – Cold drink made from Tiger

I’m from Alicante, Spain, 200 km from Valencia, horchata is made from tiger nut, and it’s typical from here (it has an awful flavour!)

For those who were wondering about the drink made from rice, that’s MEXICAN horchata. Spanish horchata is the one made from tiger nuts (they don’t seem to grow anywhere else except Spain and North Africa). And yes, the best horchata is from near Valencia; I’ve been there

Horchata is made from “tiger nuts”, which, fortunately, are vegetable and not animal (that’d be one expensive drink!).

In Valencia you find Horchata stands, where you can sample the ingredients (nope, I’m not going to say it) and buy a cup (man, that’s really asking for it, isn’t it?).
